Blueberry + Raspberry Chia Jam
Prep Time: 5 Minutes
Cook Time: 20 Minutes + Cooling
Yield: 1 Pint
1 Cup blueberries
2 Cups raspberries
1/4 Cup pure maple syrup
1/4 Cup chia seeds
1 teaspoon lemon zest
1/2 teaspoon pure vanilla extract
Combine berries and maple syrup in a saucepan. Cook over medium heat until berries begin to soften and burst, about 5 minutes.
Add chia seeds and lemon zest, cook until very thick, about 15 minutes. Stir often so it doesn’t stick to the bottom of the pan.
Remove from heat and add vanilla. Let cool for about 10 minutes, then pour into a pint jar. Leave it to cool for about 30 minutes or so before you put the lid on.
Store in the fridge for up to 7 days, but it probably won’t last that long 🙂
Chia seeds are loaded with Omega 3’s, protein, fiber and antioxidants. These little super seeds absorb the fruit juices and have amazing gelling power. If you’ve never tried them, this recipe is a great way to check them out!
Perfect on toast, but try it on oatmeal, Greek yogurt, pancakes, etc. Yum.
