1 Small white onion, diced
1 Bunch green onions, diced
2 Pounds raw halibut
3-4 Fresh lemons or limes ( I use both)
2 teaspoons course sea salt
1 Small jalapeño pepper, seeded and minced
1/4 teaspoon cayenne pepper
Cut halibut into small, bit-sized pieces and place in large glass bowl. Add diced white and green onion. Squeeze fresh lemon and lime over the top. Add minced jalapeños, salt, and cayenne pepper. Mix well and cover. Refrigerate 2 hours. Stir, add more salt if needed and serve!
*If there is a lot of excess liquid, drain before serving
Ceviche is raw fish marinated in lemon and/or lime juice. The acid from the citrus ‘cooks’ the fish without using heat. The flesh of the fish will turn from translucent to opaque – you’ll see the difference after if chills in the fridge for a few hours. This is a basic recipe and we think it is perfect as is, but you can certainly doctor it up: add cilantro, diced tomatoes, etc. and make ceviche taco’s, or serve it with tortilla chips and eat it like a dip. It is the quintessential Alaskan summer side – fresh, healthy and unbelievably flavorful.
